Spring 2026 Seasonal Menu: Fresh Flavors from Texas Farms

Spring in Texas is a magical time for food. As the weather warms and local farms begin their first harvests, we at Taco Cabina get excited to refresh our menu with the freshest seasonal ingredients the Lone Star State has to offer. Our Spring 2026 seasonal menu is our most ambitious yet, featuring ingredients sourced from six different Texas farms within 100 miles of San Antonio.

Our Farm Partners

This spring, we are proud to partner with some of the best small farms in the Texas Hill Country region. Mill-King Market and Creamery in Waco provides our dairy products, including the fresh cheese curds we use in our seasonal queso. Engel Farms in San Antonio grows our heirloom tomatoes and specialty peppers. Johnson Backyard Garden supplies our lettuces and herbs, while Lightsey Farms provides pasture-raised meats.

We believe that the best food starts with the best ingredients, and there is no better way to ensure quality than to know your farmers personally. Chef Marco visits each of our partner farms regularly, and several of our farmers are regulars at the restaurant. This is not just a business relationship -- it is a community.

New Spring Tacos

Spring Vegetable Taco (V)

This vibrant taco celebrates the first spring harvest with grilled asparagus, roasted radishes (yes, roasting makes radishes sweet and mellow), fresh pea shoots, and crumbled queso fresco from Mill-King Creamery. Topped with a bright cilantro-pepita salsa verde and a squeeze of Meyer lemon. Available on corn or flour tortilla. $4.25

Lamb Barbacoa Taco

For spring, Chef Marco is preparing a special lamb barbacoa using pasture-raised lamb from Lightsey Farms. The lamb shoulder is slow-braised with guajillo chiles, Mexican oregano, and cloves until meltingly tender, then served on corn tortillas with pickled red onions, fresh mint, and a drizzle of salsa macha. $5.50

Shrimp and Mango Taco

Gulf shrimp marinated in lime and ancho chile, grilled until just pink, and topped with a vibrant mango-habanero salsa, shaved purple cabbage, and avocado crema. This taco is a celebration of warmth and bright flavors. $5.00

Seasonal Plates

Pollo con Mole Verde

Grilled chicken breast topped with a brilliant green mole made from pumpkin seeds, tomatillos, cilantro, lettuce, and serrano chiles. The sauce has a beautiful nutty, herbal quality that is lighter and brighter than traditional dark mole. Served with herbed rice and black beans. $16.99

Texas Wagyu Carne Asada

Hand-cut Texas Wagyu skirt steak from 44 Farms, marinated simply in lime, garlic, and salt to let the exceptional beef quality shine. Grilled over mesquite to medium-rare and served with elote, charro beans, and fresh flour tortillas. This is a steak lover's dream plate. $24.99

Spring Drinks

Strawberry Agua Fresca

Made with the first strawberries of the season from Poteet, TX, the strawberry capital of Texas. Fresh strawberries blended with water, lime juice, and just enough sugar to enhance the natural sweetness. Light, refreshing, and absolutely beautiful in the glass. $4.99

Cucumber Lime Agua Fresca

Cool cucumber blended with fresh lime juice, a hint of mint, and a tiny touch of serrano for a barely-there tingle. The most refreshing drink on the menu as temperatures start to climb. $4.49

Farm-to-Table Philosophy

Our commitment to local sourcing is not just about marketing -- it is about flavor. Produce that travels 50 miles from a Hill Country farm to our kitchen tastes fundamentally different from produce that travels 2,000 miles in a refrigerated truck. The tomatoes are more flavorful. The herbs are more aromatic. The meat has more character.
